Daily Operations

Open the correct day
Open Kitchen → Today, the Kitchen companion page. Select a date using the calendar and arrows; Today returns to the current day. Check restaurant and open/closed status. A historical day without a report differs from a loading error. Some production and receiving actions are offered only for the current day.
Access and required data
Changes require kitchen management permission and the relevant report controls. Configure recipes, units, prices and suppliers for useful calculations. Unmatched sales and missing recipes limit consumption/forecast coverage; they do not mean zero consumption.
Prepare service
In Prepare service, review preparations to launch, targets, sales forecasts and deliveries to check. A forecast is an estimate. Open a preparation and confirm production to record a batch; viewing a target or forecast produces nothing. Unavailable indicators show loading/error states, not reliable zero counts.
During service
During service compares preparation stock with a target entered for the next service. These targets are a local page simulation, not saved stock counts or supplier orders. Production requires a separate confirmation. Also review the sales journal and ingredients needing replenishment.
Import, link and correct sales
In Day review, open the journal, Import sales or Manual Sales Entry on an open report. Choose Foody POS or the offered external/Aviv file source, then review rows and item links. Do not manually duplicate sales already pulled from POS. Save manual quantities and check the result; link unmatched external products before interpreting consumption.
Check and receive deliveries
In Prepare service, Check delivery opens an expected purchase order. Check actually delivered quantities before confirming. Scan/import and quick receiving are separate actions. View recorded receipts in their drawer. Authorized deletion requires confirmation and can reverse the relevant movement; do not credit the same delivery twice through another import.
Compare expected and counted stock
Day review separates expected stock, physically counted quantities and variance. Use review filters/search, open an ingredient, enter its measured remaining quantity and confirm. Physical counts are optional: a missing count remains uncounted, not zero. Check the unit and saved result. Unmatched sales indicate incomplete coverage.
Use the dedicated cost and recipe workspaces
The review uses available sales, recipes and movements to explain variance. Cost/margin analysis and recipe imports have dedicated workspaces; do not look for the former charts or a recipe-import button inside this review. Food cost · Recipe Lab · Recipe quantities.
Save the handover note
Enter the handover note in Day review and use Save Draft after changes. This saves the note and recomputes the report; it does not close the day or send supplier orders. Wait for confirmation before changing date or leaving.
Close the day
Check sales, mappings and counts, then click Close Day and accept its confirmation. Closing recomputes/freezes the report, applies external/manual consumption not yet deducted and reconciles explicitly counted ingredients. Foody POS sales already deduct stock through the order flow and are not deducted again at close. Closing neither generates nor sends supplier orders. After an uncertain response, refresh and check closed status before another action.
Reopen an eligible report
Reopen day is offered for an eligible closed report, excluding historical-only imports. After confirmation, the server reverses deductions/count reconciliations belonging to that close and makes the report editable. Review sales/counts, then close again when appropriate. It does not recall supplier emails already sent.
Explicitly generate estimated drafts
On a closed report, open Estimated Supplies. Click All recorded sales, Aviv and manual sales or From POS to generate. Closing alone does not run generation. The calculation uses history, recipes and stock to suggest shortages grouped by supplier. It creates drafts without sending emails or orders. Review quantities, units and supplier; regeneration replaces previously generated drafts for that report. A forecast remains an estimate; diagnostics distinguish missing history, unlinked recipes and no shortages.
Review and manually send
Closing or generation never automatically sends a supplier order. Review the draft and requested delivery date; a delivery date/start is required for email. If missing, use the order’s send dialog in Kitchen → Purchases, fill Delivery date and start and complete the manual send there. If the date is already set, Send order in the estimated drawer opens the dialog: check the recipient, then click Send. Only this explicit action triggers email. Check status and result afterward; if uncertain after sending, verify before retrying. Purchases and orders.
Recover after an error
Distinguish empty results from load failures. If a confirmed save is followed by refresh failure, reload the result instead of repeating receipt, production, close or send. Preserve unsaved input before changing date. If sending remains uncertain, check the order and delivery outcome before transmitting again.
Workflow and related guides
Prepare service, receive deliveries, review sales/stock, save handover, then close. Separately generate and review supplier drafts; send only after manual confirmation. Stock · Preparations · Delivery import · Purchases. For an item tracked by a shared counter whose rule shows the remaining count, the cart accounts for available quantity even above the low-stock threshold. That threshold controls the warning, not the cart cap. See Availability to check the rule and manual overrides.
Check the series stock journal
Predefined item stocks now have a journal under Items & menus → Stock history and on each product. A rotating carte can prepare initial allowances per series and publish them without restoring already committed units. Previous remaining counts are not carried forward. Order changes and pre-production releases use the original frozen pool; a produced item remains consumed. Ingredient/preparation quantities and recipe costs remain separate. See Availability for initial imports, corrections and history filters.
Identify the variant to prepare
For an item with position choices, check the characters and their order on the order and ticket. Kitchen counters distinguish choice combinations so two products with the same format are not confused. Availability and stock movements continue to use the item and its priced format; a descriptive character creates no surcharge or second stock debit.
